Geneva's 1910 Bar heats up summer fun

GENEVA – After recently celebrating its first anniversary, 1910 Bar in Geneva unveiled its new summer specials to keep the party going.

Among the fresh additions is a specialty cocktail.

"We created and made the [Hibiscus ] Gin Sour for the Golf.Give.Gala, which supports the Michael Phelps Foundation," co-owner Lindsey De Los Santos said about the spring fundraiser by the Olympian. "It was exciting to make food and cocktails for Michael and all of the other celebrities in town."

The drink combines gin, fresh lime, house-made hibiscus syrup, egg white foam and Angostura bitters.

Another addition is the Summer Blondie Martini that starts with the Blondies vodka cocktail developed by Jenny McCarthy of St. Charles, incorporating coconut water, pineapple juice, lime juice and stevia topped with champagne.

Two new snacks are available Friday and Saturday only. The ceviche is made with shrimp, scallops, white fish, lime juice, garlic, cilantro and ancho pepper, accompanied by sweet potato, hominy and plantain chips. The other is poke ensalada mixta, whose ingredients are raw sashimi-grade tuna, romaine, arugula, roasted corn and poblano, black beans, onions, queso fresco, tortilla strips and avocado with a lemon serrano dressing.

Like so many of their dishes, De Santos said she and her husband, Sergio, devised the ceviche while traveling.

"We've come up with all of our recipes," she said. "We got the idea when were in Miami in the spring and had some ceviche and kind of got inspired to create that."

During the bar's inaugural year, she said the most popular dishes on the Mexican fusion menu have included the poke nachos offered Friday and Saturday nights, the El Macho taco with steak and chorizo; the Maui fish taco; and a vegan taco esquites, featuring Mexican street-style corn and zucchini with a vegan avocado crema and crispy sweet potatoes on top. It's a 1910 Bar original, she said.

DJs are featured Friday and Saturday, and there's patio seating. Located on Route 31 just south of the intersection with Route 38, 1910 Bar is open from 5 to 10 p.m. Tuesday through Thursday; 5 p.m. to 1 a.m. Friday and Saturday; and 5 to 9 p.m. Sunday.
